process.<br \/> The grinding is carried out 24 hours after collecting the olives.<br \/> During the production the only \u00a0<strong>mechanical processes<\/strong> used are the ones to preserve the properties<br \/> and quality of the olive.\u00a0We use the continuous three-phase system.\u00a0This traditional system is currently not used by the<br \/> big olive industries, providing our olive care of the olive tree.<\/p>\n<p>The <strong>cultivation takes place in the mountains<\/strong> (traditional plantation and not extensive). <\/p>\n<p>The systems that we use are manual (picking or handpole-beating) as well as mechanized (vibration). Secondly, the olives are cleaned with water. <br \/>It is of great importance to obtain olive oil of great quality, that the main reception lines such as cleaning by tossing and by water are independent.<\/p>\n<p>The fruit must be pressed in the shortest time frame. In our olive mill this time will never surpass 24 hours since the collection.<\/p>\n<\/div>\n<\/div><\/div><\/div><\/div><\/div><div id=\"pg-828-4\"  class=\"panel-grid panel-no-style\" ><div id=\"pgc-828-4-0\"  class=\"panel-grid-cell\" ><div id=\"panel-828-4-0-0\" class=\"so-panel widget widget_sow-editor panel-first-child\" data-index=\"10\" ><div class=\"panel-widget-style justify;\">The milling is done with a <strong>continuous system<\/strong> of metallic hammers that will grind the olive, to make the separation of the oil easier.<\/p>\n<p>The olive paste will be moved to blenders where stainless steel helicoidal blades will extract the oil.<\/p>\n<p>The blending will always take place in <strong>temperatures under 27 degrees<\/strong>, which is also known as cold extraction.<\/p>\n<\/div>\n<\/div><\/div><\/div><\/div><div id=\"pgc-828-4-1\"  class=\"panel-grid-cell\" ><div id=\"panel-828-4-1-0\" class=\"so-panel widget widget_sow-editor justify;\">This process takes place in a <strong>decanter<\/strong>, this machine substitutes the old \u00a0press from the traditional system.<\/p>\n<p>Here the paste is separated by centrifugation in its three components: <strong>oil, vegetable water and olive pomace<\/strong>.<\/p>\n<p>Once separated the solid components (olive pomace) are separated from the liquid ones (oil and vegetable water), the resulting liquid is moved to<strong> vertical centrifugal<\/strong> pumps that finally separate the vegetable water from the oil.<\/p>\n<\/div>\n<\/div><\/div><\/div><\/div><\/div><div
